Here are some recipes that use the salt koji we made last time! We will introduce recipes for "Red rice made with salt koji", "Grilled red snapper with salt koji", and "Salt koji soup". These are simple dishes that you can enjoy with their elegant and deep flavor.

Put the beans and water in a pot, bring to a boil and drain in a colander. Return the beans to the pot, add about 2 cups of water and bring to a boil. Cook over low heat for about 20 minutes. Boil the beans until they are firm, as they will be cooked together in the rice cooker. Save the cooking water.
Wash the glutinous rice and non-glutinous rice and drain the water (about 30 minutes).
Add the boiled azuki bean water and water according to the amount of water for white rice or sticky rice in the rice cooker, and cook the azuki beans and salt koji on top of the rice. If you mix the ingredients together at this time, the bottom will burn when cooking, so cook the rice without mixing it. Once cooked, mix the whole thing lightly and steam it.
