In "Chami-san's Kitchen," Chami-san, who teaches fermentation and dim sum cooking classes at home, will teach us various seasonal recipes under the theme of "Fermentation x Celebration."
This time, we will introduce birthday celebration recipes in three parts! Once all the dishes are made, it's sure to be a luxurious table! This time, we will introduce recipes for "Shrimp Gyoza," "Mushroom Sauté," and "Crispy Cream Cheese"!
Let's make a body-friendly celebratory menu!



Prepare the shrimp. Put the deveined shrimp in a bowl, add 1 tablespoon of potato starch, 1 tablespoon of sake, and 1 teaspoon of salt, and rub well. Drain in a colander and rinse thoroughly with water. Blot dry thoroughly with kitchen paper.

Mix 1-2 teaspoons of green onion salt koji into the shrimp and let it sit for about 10 minutes. Lightly remove excess moisture with kitchen paper.


Place a shrimp in the center of a gyoza (or shumai) wrapper, moisten the edges of the wrapper with water, fold it in half, and seal.

Pour about 1 cm of oil into a frying pan and pan-fry until golden brown. (Adjust according to the size of your frying pan)


Even though the process is simple, a party-like dish is completed in no time! The power of salt koji makes the shrimp plump! The pan-fried wrappers are crispy, which kids will love! The gentle saltiness of the salt koji brings out the flavor of the shrimp, and the scent of green onions adds an accent.

Please prepare your favorite types of mushrooms. This time, we prepared king oyster mushrooms, shiitake mushrooms, maitake mushrooms, button mushrooms, and shimeji mushrooms. Cut shiitake and king oyster mushrooms into bite-sized pieces.

Melt butter and sauté the mushrooms. Sprinkle with 1 tablespoon of sake, cover, and steam.

Once cooked, open the lid and let the moisture evaporate. Add soy sauce koji and stir-fry, then sprinkle with black pepper. Taste and adjust the amount of soy sauce koji.

The rich, buttery flavor, combined with the gentle saltiness and umami of soy sauce koji. This elegant and profound mushroom sauté combines the best of Japanese and Western flavors. It's also perfect as a snack!

Divide the cream cheese in half and mix 1/2 to 1 teaspoon of salt koji thoroughly into each half.

Add 1 tablespoon of raisins to one half of the cream cheese, and 1 tablespoon of tuna to the other half, and mix well. Arrange senbei or crackers and place the cream cheese on top.

Crispy cream cheese is done in no time!
